Karo Syrup-Free Caramel Popcorn Recipes
SWEETER VERSION (But with less butter)
Popping Corn
4 Tbsp. (1/4 C.) Butter
1/2 C. Honey
Salt
Sunflower Oil (or butter, for popping)
MORE BUTTERY VERSION (But with less honey)
Simply pop a batch of corn (about 2/3 a cup of kernels). While it cools in a big bowl, melt half a stick of butter down with 2-3 spoonfuls of honey (it depends on your sweet tooth). Add a generous amount of salt and a splash of vanilla (optional, but it adds a great aroma). Let the honey butter mixture come to a foaming boil, stirring constantly. Once it has reached the boiling point, remove the pot from the heat and drizzle it over the popcorn, tossing the corn with a long-handled spoon as you pour.
MY VERSION
Equal parts honey and butter (about 1/2 c. to 1 c.)
Pop popcorn and set aside. Melt honey and butter on the stove in a pan. Stir continuously until the mixture starts to turn a brownish color (it may take a few minutes, just be patient...it will be noticeable when it happens). Quickly pour mixture over popcorn and enjoy!
*I haven't tried this, but if you want to try and substitute some butter, you could probably try using coconut oil
